Tomato Topping

Bread

  • 1 garlic clove, cut in half (for rubbing)


Instructions

  1. Prepare the Whipped Feta Spread: In a food processor or blender, combine the feta cheese block, softened cream cheese, olive oil, lemon juice, honey, and minced garlic if using. Blend until smooth and creamy, scraping down sides as needed to ensure an even consistency.
  2. Make the Tomato Topping: In a medium bowl, toss together the halved cherry tomatoes, olive oil, balsamic vinegar, minced garlic, chopped fresh basil, salt, and black pepper. Set aside to marinate briefly, allowing the flavors to meld.
  3. Toast the Baguette Slices: Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and brush each with olive oil. Toast in the oven for about 8-10 minutes, or until golden brown and crisp.
  4. Rub Garlic on Toast: As soon as the toasted baguette slices come out of the oven, gently rub each slice with the cut side of the garlic clove to add a subtle garlic flavor.
