Watermelon Margarita Popsicles

  • 1 small watermelon (about 5-6 pounds), cut into pieces, rind discarded
  • Juice of 1 lime
  • 4 ounces silver tequila
  • 1/4 teaspoon sea salt, or to taste


Instructions

  1. Prepare the watermelon: Cut the watermelon into small pieces, making sure to discard the rind. Place the watermelon pieces into a blender and blend until completely pulverized into a smooth puree.
  2. Mix ingredients: Add the lime juice, silver tequila, and sea salt to the blended watermelon. Blend again or mix thoroughly until all ingredients are well combined.
  3. Fill molds and start freezing: Pour the mixture into popsicle molds, leaving some space at the top since the liquid will expand when frozen. Place the molds in the freezer for 2 to 2.5 hours to partially freeze.
  4. Insert sticks and complete freezing: After partial freezing, insert the popsicle sticks into each mold. Return molds to the freezer for an additional 3 to 4 hours until fully frozen.
  5. Remove popsicles from molds: To easily remove the popsicles, fill the sink with hot water and carefully dunk the molds for a few seconds to loosen the popsicles. Gently pull them out. Transfer any remaining popsicles to a large Ziploc bag for storage in the freezer to maintain freshness.

Notes

  • For best flavor and texture, consume popsicles within 1-2 weeks of freezing.
  • You can adjust the amount of tequila and sea salt according to your taste preference.
  • Make sure not to fill popsicle molds to the very top to allow for expansion during freezing.
  • If you want a non-alcoholic version, simply omit the tequila and add a splash of sparkling water or extra lime juice for zing.
