Ingredients
Scale
Sauce Ingredients
- 3 teaspoons rice vinegar
- 3 teaspoons soy sauce
- 3 teaspoons peanut oil
- 3 tablespoons hoisin sauce
- 6 tablespoons peanut butter
- 1 teaspoon garlic powder
- 1 teaspoon sugar
- 3 tablespoons water
Wrap Ingredients
- Butter leaf lettuce (enough for 10 wraps)
- 4.4 ounces vermicelli noodles (approximately half a package)
- 1/4 lb. carrots, grated
- 1/4 cucumber, cut into sticks
- 1 avocado, sliced
- Spring onions (quantity not specified, sliced)
Instructions
- Cook Vermicelli: Prepare the vermicelli noodles according to package directions, which typically involves boiling for a few minutes. Once cooked, drain and set aside to cool.
- Make Peanut Sauce: In a small pan over medium heat, combine rice vinegar, soy sauce, peanut oil, hoisin sauce, peanut butter, garlic powder, sugar, and water. Stir frequently and cook for less than five minutes until the sauce is hot and well combined.
- Prepare Vegetables: Slice the spring onions, julienne the cucumber into sticks, grate the carrots finely, and slice the avocado.
- Assemble Wraps: Take large leaves of butter lettuce and fill them with a portion of cooled vermicelli, grated carrots, cucumber sticks, avocado slices, and spring onions. Drizzle the prepared peanut sauce over the fillings. Serve with additional peanut sauce on the side for dipping if desired.
Notes
- You can substitute peanut butter with another nut butter if you have allergies, but it will alter the flavor.
- Make sure to cool the vermicelli noodles completely before assembling the wraps to prevent the lettuce from wilting.
- Butter leaf lettuce works best for these wraps because of its softness and flexibility, but iceberg lettuce can be used as an alternative.
- This recipe can be adjusted to taste by adding chili flakes or sriracha to the peanut sauce for some heat.
- Leftover peanut sauce can be stored in the refrigerator for up to 3 days.
