  • 2 ½ cups water

  • 2 teaspoons vanilla extract
  • Pink gel food coloring

Instructions

  1. Prepare the Cake Batter: Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the two boxes of white cake mix with 8 large egg whites, 2 ½ cups water, and 1 cup canola oil. Mix thoroughly using an electric mixer on medium speed until the batter is smooth and well combined, ensuring no lumps remain.
  2. Bake the Cake Layers: Divide the batter evenly into greased and floured cake pans. Place in the preheated oven and bake for approximately 30-32 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  3. Make the Buttercream Frosting: In a large bowl, beat 3 cups of softened unsalted butter until creamy and fluffy. Gradually add 6 cups of powdered sugar, mixing on low speed to prevent a powdered sugar cloud. Add 5 tablespoons of heavy whipping cream and 2 teaspoons of vanilla extract, then increase speed to medium and beat until light and fluffy. Add several drops of pink gel food coloring, mix until the desired pink shade is achieved.
