Meatloaf Mixture
- 20 oz ground turkey
- 1/2 cup quick or old fashioned oats
- 1 carrot
- 1 stalk celery
- 2 cloves garlic
- 1 egg
- 2 tablespoons ketchup (plus additional for topping)
- 1/2 teaspoon salt
- 1/2 teaspoon onion powder
Instructions
- Preheat Oven: Preheat your oven to 375º F. Prepare a muffin tin by lining it with silicone muffin liners or lightly greasing it to prevent sticking.
- Prepare Vegetables: Place the carrot, celery, and garlic into a food processor and pulse until they are minced into very small pieces, about 10 seconds. If you don’t have a food processor, finely chop them by hand or use a food chopper.
- Mix Ingredients: In a large bowl, combine the minced vegetables, oats, egg, 2 tablespoons of ketchup, salt, and onion powder. Add the ground turkey and gently mix with a large spoon or your hands. Mix just until combined to avoid a dense texture.
- Fill Muffin Tin: Divide the turkey mixture evenly among the muffin cavities of the prepared tin. Each cavity should be filled to about the top.
- Add Topping: Place a small amount of ketchup on top of each meatloaf muffin. Use the back of a spoon to spread it evenly over the surface.
- Bake: Transfer the muffin tin to the oven and bake for 22 to 25 minutes, or until the meatloaf muffins are fully cooked through.
