  • 4 tablespoons tahini, divided
  • 2 eggs
  • 1/3 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees F. Line an 8×8 inch baking pan with parchment paper for easy removal.
  2. Mix Dry Ingredients: In a small bowl, combine cornstarch and unsweetened cocoa powder. Stir well to evenly distribute.
  3. Melt Chocolate Mixture: In a microwave-safe bowl, melt the bittersweet chocolate in the microwave for 1 to 1 1/2 minutes. Stir in the coconut oil and 2 tablespoons of tahini until the mixture is smooth and fully combined.
  4. Beat Eggs and Sugars: In a large mixing bowl, add eggs, granulated sugar, and light brown sugar. Using a hand mixer, beat on medium-high speed for 3 to 4 minutes until the mixture is smooth and has doubled in volume.
  5. Add Flavorings and Chocolate: Add sea salt and vanilla extract to the egg mixture. Then pour in the melted chocolate mixture. Beat on medium speed until combined, then increase to medium-high speed and beat for 30 seconds to 1 minute until thick and holding its shape.
  6. Incorporate Dry Ingredients: Add the cornstarch and cocoa powder mixture into the batter. Beat on medium-high speed for 30 seconds to 1 minute until thick and stable.
  7. Prepare for Baking: Spread the brownie batter evenly in the prepared baking pan. Drizzle the remaining 2 tablespoons of tahini over the top. Use a toothpick or fork to swirl the tahini throughout the batter for a marbled effect.
  8. Bake: Bake in the preheated oven for 22 to 26 minutes, or until the top is browned and the edges are puffed up. Remove from oven and let cool for 10 minutes before cutting into 9 squares.
