  • 4 medium sweet potatoes
  • Shredded mozzarella cheese (to taste, approx. 1 cup)

Instructions

  1. Cook the Sweet Potatoes: Poke holes all over the sweet potatoes with a fork to allow steam to escape during cooking.
  2. Microwave Sweet Potatoes: Place the sweet potatoes in a microwave-safe dish with a bit of water. Microwave on high for 10 minutes. Check for doneness and if not fully cooked, microwave for an additional 5 minutes until tender.
  3. Heat Skillet: Preheat a skillet over medium-high heat to prepare for cooking the beef mixture.
  4. Cook Beef and Aromatics: Add ground beef, chopped onion, and minced garlic to the hot skillet. Cook, stirring occasionally until the beef is browned and onion is tender, about 5-7 minutes. Drain any excess grease from the pan.
