Ingredients
Scale
Pie Base
- 1 (6-ounce) premade graham cracker crust (170 grams)
Filling
- 12 ounces frozen lemonade concentrate, thawed (340 grams, 1 can)
- 12 ounces sweetened condensed milk, low-fat works fine (340 grams, 1 can)
- 8 ounces frozen whipped topping, thawed (227 grams, 1 regular-sized tub, low-fat works fine)
- 20 drops yellow food coloring (optional)
Strawberry Mixture
- 2 cups chopped strawberries, frozen or fresh (334 grams)
- ¼ cup granulated sugar (50 grams)
Garnish (Optional)
- Lemons
- Strawberries
Instructions
- Prepare Strawberry Puree: In a food processor, combine the chopped strawberries and granulated sugar; pulse until well mixed and smooth. Set aside for later layering.
- Make Lemonade Filling: Using a stand mixer fitted with a paddle attachment, beat together the thawed whipped topping, thawed lemonade concentrate, and sweetened condensed milk until the mixture is smooth and creamy. Add yellow food coloring if you prefer a more vibrant yellow color.
- Assemble Pie Base: Pour the creamy lemonade mixture into the premade graham cracker crust, spreading evenly.
- Add Strawberry Swirl: Spoon the strawberry mixture over the lemonade filling and gently swirl it into the top using a knife to create a marbled effect. Be cautious when adding the strawberry mixture not to overflow the crust; add gradually as needed.
- Freeze the Pie: Place the assembled pie in the freezer and freeze for approximately 8 hours or overnight until fully set and firm.
- Serve: Once frozen, slice the pie and garnish with fresh lemon slices and strawberries as desired before serving.
Notes
- Using frozen strawberries works well and helps maintain the pie’s chilled texture.
- Low-fat versions of whipped topping and condensed milk can be used for a lighter dessert.
- Allow the pie to freeze thoroughly; cutting too soon may result in a messy slice.
- Optional food coloring adds a bright visual touch but does not affect flavor.
- Garnishing with fresh fruit adds color and extra freshness to each slice.
