Description

This Strawberry Frozen Lemonade Pie is a refreshing no-bake dessert perfect for warm weather. It combines a tangy and creamy lemonade base with fresh strawberry puree swirled on top, set in a crunchy graham cracker crust. Easy to prepare and requiring no cooking, it’s a crowd-pleaser that offers a bright, fruity flavor with a smooth, icy texture.

Ingredients

Scale

Pie Base

  • 1 (6-ounce) premade graham cracker crust (170 grams)

Filling

  • 12 ounces frozen lemonade concentrate, thawed (340 grams, 1 can)
  • 12 ounces sweetened condensed milk, low-fat works fine (340 grams, 1 can)
  • 8 ounces frozen whipped topping, thawed (227 grams, 1 regular-sized tub, low-fat works fine)
  • 20 drops yellow food coloring (optional)

Strawberry Mixture

  • 2 cups chopped strawberries, frozen or fresh (334 grams)
  • ¼ cup granulated sugar (50 grams)

Garnish (Optional)

  • Lemons
  • Strawberries

Instructions

  1. Prepare Strawberry Puree: In a food processor, combine the chopped strawberries and granulated sugar; pulse until well mixed and smooth. Set aside for later layering.
  2. Make Lemonade Filling: Using a stand mixer fitted with a paddle attachment, beat together the thawed whipped topping, thawed lemonade concentrate, and sweetened condensed milk until the mixture is smooth and creamy. Add yellow food coloring if you prefer a more vibrant yellow color.
  3. Assemble Pie Base: Pour the creamy lemonade mixture into the premade graham cracker crust, spreading evenly.
  4. Add Strawberry Swirl: Spoon the strawberry mixture over the lemonade filling and gently swirl it into the top using a knife to create a marbled effect. Be cautious when adding the strawberry mixture not to overflow the crust; add gradually as needed.
  5. Freeze the Pie: Place the assembled pie in the freezer and freeze for approximately 8 hours or overnight until fully set and firm.
  6. Serve: Once frozen, slice the pie and garnish with fresh lemon slices and strawberries as desired before serving.

Notes

  • Using frozen strawberries works well and helps maintain the pie’s chilled texture.
  • Low-fat versions of whipped topping and condensed milk can be used for a lighter dessert.
  • Allow the pie to freeze thoroughly; cutting too soon may result in a messy slice.
  • Optional food coloring adds a bright visual touch but does not affect flavor.
  • Garnishing with fresh fruit adds color and extra freshness to each slice.
