Ingredients
Scale
Filling
- 1/2 cup Cream Cheese, softened
- 2 tbsp Sugar
- 1/2 tsp Vanilla Extract
- 1/2 cup Strawberries, diced
Quesadilla
- 4 Tortillas (6-inch)
- 2 tbsp Butter, softened (divided)
- 1 tsp Sugar
- 1/2 tsp Cinnamon
Instructions
- Prepare the Cream Cheese Mixture: In a mixing bowl, combine the softened cream cheese, sugar, and vanilla extract. Use a mixer or whisk to beat the mixture together until smooth and creamy.
- Fold in Strawberries: Gently fold the diced strawberries into the cream cheese mixture, being careful not to mash the berries. Mix until the strawberries are evenly distributed.
- Assemble the Quesadilla: Spread half of the strawberry cream cheese filling evenly over one tortilla and set it aside.
- Heat the Butter: Heat 1 teaspoon of butter in a skillet over medium-high heat. Once melted, place the prepared tortilla, cream cheese side up, onto the skillet.
- Top the Quesadilla: Spread 1 additional teaspoon of butter onto a second tortilla and place it, butter side up, on top of the filling to make a sandwich.
- Cook the Quesadilla: Cook the quesadilla for 2-3 minutes per side, or until both sides are golden brown and crispy. Press gently with a spatula to ensure even browning.
- Repeat for Second Quesadilla: Repeat the spreading, buttering, and cooking process to prepare the second quesadilla. Alternatively, you can use a griddle to cook both at the same time.
- Prepare Cinnamon Sugar Topping: In a small bowl, mix together the sugar and cinnamon.
- Finish and Serve: Immediately after cooking, sprinkle the cinnamon sugar mixture on top of the cooked quesadillas. Allow to cool for 2 minutes, then slice into wedges and serve warm. Optionally, serve with strawberry sauce for dipping.
Notes
- Make sure cream cheese is softened for easy mixing.
- Be gentle when folding in strawberries to keep pieces intact.
- Use medium heat to avoid burning the tortillas while ensuring they get crispy.
- Butter the tortillas just before cooking to ensure an even golden crust.
- Serve warm for the best texture and flavor.
- Optional: Add a drizzle of strawberry or chocolate sauce for extra decadence.
