Description

Celebrate St. Patrick’s Day with these festive green cake pops made from your favorite vanilla or chocolate cake mix. Coated in smooth chocolate and decorated with colorful sprinkles, these bite-sized treats are perfect for parties and gatherings.

Ingredients

Scale

Cake Mix

  • 1 box (15.25 oz) vanilla or chocolate cake mix
  • 3 large eggs
  • ½ cup unsalted butter, melted
  • 2 drops green food coloring

Decoration

  • 1 cup semi-sweet chocolate chips
  • ½ cup rainbow sprinkles

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a round baking pan to prepare for baking the cake.
  2. Prepare and Bake Cake: Prepare the cake mix according to the package instructions, then pour the batter into the greased pan and bake until a toothpick inserted in the center comes out clean, indicating the cake is fully baked.
  3. Cool and Crumble Cake: Allow the cake to cool completely, then crumble it into fine pieces in a large mixing bowl to create the base for the cake pops.
  4. Mix Ingredients: Add the melted unsalted butter and green food coloring to the crumbled cake. Mix thoroughly until the mixture is evenly colored and combined, making it easier to shape.
  5. Form Cake Balls: Roll the mixture into 1-inch balls using your hands, then place them onto parchment-lined baking sheets, spacing them evenly.
  6. Melt Chocolate: Melt the semi-sweet chocolate chips in the microwave in short intervals, stirring frequently until smooth and fully melted.
  7. Assemble Cake Pops: Dip each pop stick into the melted chocolate, then insert the stick into each cake ball. Next, coat the entire cake ball with melted chocolate and immediately decorate with rainbow sprinkles for a festive look.
  8. Set Cake Pops: Place the cake pops upright and allow them to set at room temperature for about an hour or until the chocolate coating hardens completely.

Notes

  • You can use either vanilla or chocolate cake mix based on your preference.
  • For a stronger green color, add an extra drop of food coloring.
  • Make sure the cake is fully cooled before crumbling to avoid a sticky mixture.
  • Use parchment paper to prevent sticking during the assembly process.
  • Store cake pops in an airtight container at room temperature for up to 2 days.
