Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). If using a store-bought pie crust, place it in a 9-inch pie dish and set aside to be ready for the filling.
  2. Make the pineapple filling: In a medium saucepan, combine the drained crushed pineapple, sugar, flour, cornstarch, vanilla extract, and lemon juice. Stir the ingredients well until fully incorporated.
  3. Cook the filling: Place the saucepan over medium heat and cook the mixture, stirring constantly, until it thickens and begins to bubble. This will take about 5 to 7 minutes.
  4. Cool slightly: Remove the thickened pineapple mixture from the heat and let it cool for about 5 minutes so it’s warm but not hot.
  5. Add eggs: Whisk the beaten eggs into the slightly cooled pineapple mixture, stirring thoroughly until smooth and even.
