Description

Delight in these Snickerdoodle Cheesecake Bites, a perfect bite-sized dessert combining a cinnamon-spiced graham cracker crust with a creamy cheesecake filling, all topped with a sweet cinnamon sugar sprinkle. Ideal for holiday gatherings or anytime you crave a charming, flavorful treat.

Ingredients

Scale

For the crust:

  • 3/4 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, melted

For the filling:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

For the topping:

  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat and prepare crust: Preheat your oven to 325°F (165°C) and line a 12-cup mini muffin tin with paper liners. In a small bowl, combine graham cracker crumbs, sugar, cinnamon, and melted butter until the mixture is evenly moistened. Spoon about a tablespoon of this mixture into each liner and press firmly to form an even crust layer. Bake for 5 minutes, then remove from oven and set aside.
  2. Make the filling: In a medium bowl, beat the softened cream cheese until smooth and creamy. Add granulated sugar, flour, egg, vanilla extract, and ground cinnamon, and mix thoroughly until the batter is smooth and well blended.
  3. Fill and bake: Spoon the cheesecake filling evenly over each pre-baked crust in the muffin liners. Bake for 14 to 16 minutes, or until the cheesecake centers are just set but still slightly jiggly.
  4. Cool and chill: Let the cheesecake bites cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely. Once cooled, refrigerate for at least 2 hours to allow the flavors to meld and the texture to set.
  5. Prepare topping and serve: Just before serving, mix together the topping sugar and cinnamon blend. Sprinkle this cinnamon sugar topper generously over each chilled cheesecake bite. Serve cold for the best texture and flavor.

Notes

  • For an extra warm flavor, add a pinch of nutmeg to the cinnamon sugar topping.
  • These cheesecake bites can be prepared a day ahead and stored in an airtight container in the refrigerator.
  • Make sure to serve them cold to enjoy the best texture and rich flavor contrast.
