Description

A delicious and elegant smoked salmon sandwich featuring creamy dill cream cheese, fresh cucumber, red onion, and peppery arugula on hearty multigrain or rye bread. Perfect for a quick, no-cook lunch or light meal with a European-inspired flair.

Ingredients

Scale

Sandwich

  • 4 slices hearty multigrain or rye bread
  • 4 oz smoked salmon, thinly sliced
  • 2 oz cream cheese, softened
  • 1 tablespoon mayonnaise
  • 1 teaspoon lemon juice
  • 1 teaspoon fresh dill, chopped
  • 1/4 teaspoon black pepper
  • 1/2 small cucumber, thinly sliced
  • 1/4 small red onion, thinly sliced
  • A handful of arugula or baby spinach

Instructions

  1. Prepare the cream cheese spread: In a small bowl, combine the softened cream cheese, mayonnaise, lemon juice, chopped dill, and black pepper. Mix well until the mixture is smooth and spreadable.
  2. Toast the bread (optional): If desired, lightly toast the slices of hearty multigrain or rye bread to enhance the texture and flavor of the sandwich.
  3. Assemble the sandwich: Evenly spread the cream cheese mixture on all four slices of bread. On two slices, layer the smoked salmon evenly, followed by the thin cucumber slices, red onion slices, and a handful of arugula or baby spinach.
  4. Complete the sandwiches: Place the remaining two slices of bread, cream cheese side down, on top of the layered slices to form two complete sandwiches.
  5. Serve: Slice each sandwich in half and serve immediately for the best taste and texture.

Notes

  • Add capers for a salty bite or avocado slices for extra creaminess.
  • Serve open-faced for a lighter presentation or cut into quarters for elegant tea sandwiches.
