Description

This Slow Cooker Swiss Steak is a comforting, tender beef dish simmered with a medley of vegetables and a rich tomato-based sauce. Perfect for an easy, hands-off meal that delivers deep flavors and melt-in-your-mouth meat, it’s ideal served over mashed potatoes or your favorite low-carb sides.

  • ½ cup all-purpose flour
  • Salt and pepper, to taste
  • 3 lbs round steak, cut into pieces

Vegetables

  • 6 stalks celery, chopped
  • 2 large onions, chopped
  • 6 carrots, shredded
  • 2 cloves garlic, minced

Other Ingredients

  • 6 tbsp vegetable oil (or avocado oil)
  • 4 (14.5 oz) cans diced tomatoes, with juice
  • 4 tbsp brown sugar (adjust to taste)
  • 2 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • ½ tsp dried thyme or rosemary
  • 1 splash red wine (optional)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Pep the meat: Mix flour, salt, and pepper in a shallow dish. Dredge steak pieces in the mixture to evenly coat each piece.
  2. Brown the steak: Heat vegetable oil in a large skillet over medium-high heat. Sear the coated steak pieces until browned on all sides. Remove from skillet and set aside.
  3. Sauté the veggies: In the same skillet, add onions, celery, carrots, and minced garlic. Cook for 5–7 minutes until the vegetables are softened and fragrant.
  4. Assemble in slow cooker: Place half of the sautéed vegetables in the bottom of the slow cooker, then layer the browned steak pieces on top. Add the remaining vegetables on top of the steak. Pour the diced tomatoes with their juice over everything.
  5. Season: Add brown sugar and Worcestershire sauce to the slow cooker. Sprinkle smoked paprika and dried thyme or rosemary evenly over the dish. Optionally, add a splash of red wine for extra richness.
  6. Cook: Cover and cook on LOW for 8–9 hours, or until the steak is tender and the flavors have melded together.
  7. Serve: Garnish with chopped fresh parsley and spoon the Swiss steak over mashed potatoes, rice, or low-carb sides like cauliflower mash or zucchini noodles.

Notes

  • For a deeper flavor, let the Swiss steak rest for 15 minutes before serving.
  • You may substitute round steak with chuck steak if preferred.
  • If you don’t have a slow cooker, this recipe can be adapted for a low simmer on the stovetop for 3–4 hours, covered.
  • Adjust brown sugar amount according to your sweetness preference.
