Instructions

  1. Optional Searing: Heat olive oil in a skillet over medium-high heat. Sear the chicken thighs for 2-3 minutes per side until browned. This step adds flavor but can be skipped if you’re short on time.
  2. Prepare the Slow Cooker: Place the chicken pieces into the slow cooker. Add minced garlic, sliced red onion, diced bell pepper (if using), Italian seasoning, crushed tomatoes, and tomato paste on top. Season with salt and pepper to taste.
  3. Cook the Chicken: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and easily shredded.
  4. Shred the Chicken: Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and stir well to combine with the sauce.
