Instructions
- Cook the Noodles: Bring a large pot of water to a boil with a pinch of salt. Add the fresh noodles and cook according to package instructions, usually 3-5 minutes until just tender.
- Prepare the Sauce: In a mixing bowl, combine the tahini, soy sauce, chili oil, and minced garlic. Stir well until the mixture is smooth and creamy.
- Drain and Cool Noodles: Reserve 1/2 cup of the pasta cooking water, then drain the noodles and rinse them under cold water to stop cooking.
- Toss Noodles with Sauce: Return the drained noodles to the pot over low heat, add the tahini sauce, and toss thoroughly to coat each strand evenly.
