  • 2 tablespoons Chili Oil (adjust according to heat preference)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ground Sichuan Peppercorns (freshly ground for maximum potency)

Garnish

  • 2 pieces Green Onions (finely chopped)
  • 1 tablespoon Sesame Seeds (toasted, optional)


Instructions

  1. Cook the Noodles: Bring a large pot of water to a boil with a pinch of salt. Add the fresh noodles and cook according to package instructions, usually 3-5 minutes until just tender.
  2. Prepare the Sauce: In a mixing bowl, combine the tahini, soy sauce, chili oil, and minced garlic. Stir well until the mixture is smooth and creamy.
  3. Drain and Cool Noodles: Reserve 1/2 cup of the pasta cooking water, then drain the noodles and rinse them under cold water to stop cooking.
