  • 3 Tbsp olive oil
  • 3 medium tomatoes
  • 5 cloves of garlic (pressed)
  • 1 Lb mushrooms
  • 1 medium onion (finely diced)
  • 1 tsp salt
  • 1 Tbsp sweet chili sauce
  • ½ cup sour cream (not low fat)
  • 1 Lb large shrimp (peeled and deveined, tails left on)
  • 1 1/2 cups reduced sodium chicken broth
  • 1 tsp sea salt


Instructions

  1. Simmer Tomatoes and Garlic: In a large heavy bottom skillet or wok, combine the diced tomatoes, pressed garlic, and olive oil. Simmer uncovered over medium heat until the tomatoes soften and release their juices, about 10-12 minutes. Remove from heat and set aside.
  2. Caramelize Onions and Mushrooms: Using the same skillet over medium-high heat, caramelize the finely diced onions and sliced mushrooms until they develop a golden color. Then add the reserved tomato and garlic mixture back into the pan.
  3. Add Seasonings and Cream: Stir in salt, sour cream, and sweet chili sauce to the pan. Then pour in the chicken broth and mix everything until combined.
  4. Simmer with Shrimp: Bring the sauce to a simmer over medium-high heat. Add the shrimp and turn them a couple times in the sauce while cooking. Simmer until the shrimp are cooked through but not overcooked to avoid rubberiness.
  5. Finish and Serve: Allow the sauce to cool slightly; it will thicken as it cools. Serve this rich shrimp and mushroom sauce over plain rice, pasta, or mashed potatoes for a delicious meal.
