Description

This Shrimp & Cheese Grilled Sandwich is a delightful combination of succulent sautéed shrimp and melted mozzarella cheese, sandwiched between buttery, toasted sourdough bread. Shrimp Filling

  • 8 oz shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Sandwich

  • 1 cup shredded mozzarella cheese (or any melting cheese)
  • 4 slices of sourdough or thick-cut bread
  • 1 tablespoon butter (for toasting)
  • Fresh parsley, chopped (optional, for garnish)


Instructions

  1. Cook the shrimp: In a skillet, heat olive oil over medium heat until shimmering. Add the minced garlic and cook for about 30 seconds until fragrant. Add the peeled and deveined shrimp, season with salt, pepper, and Italian seasoning, and sauté for 3-4 minutes until the shrimp turn pink and are cooked through. Remove from heat and set aside.
  2. Assemble the sandwich: Spread a thin layer of butter on one side of each bread slice. On the unbuttered side of two slices, evenly distribute half of the shredded mozzarella cheese. Top the cheese with the sautéed shrimp, then sprinkle the remaining cheese on top. Place the remaining bread slices on top with the buttered side facing out to form the sandwich.
  3. Grill the sandwich: Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet and grill for 3-4 minutes on one side until the bread is golden brown and crispy, and the cheese starts to melt. Carefully flip and grill the other side for another 3-4 minutes until both sides are golden and the cheese is fully melted.
