Ingredients
Scale
Hummus
- 1 cup Wild Garlic (fresh wild garlic leaves, finely chopped)
- 15 ounces Chickpeas (one can, drained and rinsed)
- 1/4 cup Tahini (adds richness and nutty flavor)
- 2 cloves Garlic (fresh, minced)
- 2 tablespoons Lemon Juice (juice of one lemon)
- 1/4 cup Olive Oil (high-quality extra virgin)
- Salt (to taste)
- Pepper (freshly cracked, to taste)
Harissa Beef
- 2 tablespoons Harissa Paste (for marinating the beef)
- 1 pound Ground Beef (good quality)
- Salt (to taste)
- Pepper (freshly cracked, to taste)
- Olive Oil (for cooking)
- Optional Fresh Herbs (such as parsley or cilantro for garnishing)
Instructions
- Prepare the hummus: In a food processor, combine the drained chickpeas, tahini, minced garlic, lemon juice, olive oil, and half of the chopped wild garlic. Blend until smooth, adding water gradually if needed to reach a creamy consistency.
- Season and garnish hummus: Taste the hummus and season with salt and freshly cracked pepper. Transfer it into a serving bowl and garnish with the remaining wild garlic leaves to add freshness and texture.
- Marinate the ground beef: In a mixing bowl, mix the ground beef with the harissa paste, salt, and pepper. Stir until the beef is evenly coated with the marinade. Let it rest for at least 15 minutes to absorb the flavors.
- Cook the beef: Heat a skillet over medium-high heat and add a drizzle of olive oil. Add the marinated beef and cook, stirring occasionally, until the beef is browned and cooked through, approximately 7 to 10 minutes.
- Rest the beef: Remove the skillet from heat and let the cooked beef rest for a couple of minutes to allow the juices to redistribute.
- Serve: Spoon the wild garlic hummus onto plates or a serving platter. Top with the juicy harissa beef, drizzle extra olive oil on top, and garnish with fresh herbs if using. Serve immediately and enjoy.
Notes
- For creamier hummus, add a tablespoon of water or aquafaba (chickpea cooking liquid) while processing.
- Adjust the amount of harissa paste depending on your preferred spice level.
- Fresh wild garlic can be substituted with regular garlic and fresh parsley if unavailable, though wild garlic adds a distinct flavor.
- Make sure to use good quality ground beef for the best texture and flavor.
- This dish pairs well with warm pita bread or fresh vegetable crudités.
