Description

  • 1 medium Onion (Finely chopped)
  • 1 handful Fresh herbs (coriander or parsley) (Chopped, for garnish)

  • 3 tablespoons Chilli oil (High-quality for best flavor)
  • Salt (To taste)
  • Black pepper (Freshly ground, to taste)
  • 1 tablespoon Lemon juice (Freshly squeezed)


Instructions

  1. Prepare the Fish: Pat the fish fillets dry with paper towels and season both sides with salt and freshly ground black pepper. Set the fillets aside while you prepare the sauce.
  2. Sauté the Aromatics: Heat the chilli oil in a large skillet over medium heat. Add the finely chopped onion and sauté for about 5 minutes until translucent and soft. Then add the minced garlic and cook for an additional minute until fragrant.
  3. Cook the Tomato Sauce: Add the diced ripe tomatoes to the skillet. Stir well and cook for 10 to 12 minutes, allowing the tomatoes to break down and create a savory, thick sauce.
  4. Simmer the Fish: Gently place the seasoned fish fillets into the skillet on top of the tomato sauce. Spoon some sauce over the fillets, cover the skillet, and reduce to a low simmer. Cook for 8 to 10 minutes until the fish is opaque and cooked through.
  5. Finish with Lemon and Herbs: Remove the skillet from heat. Squeeze fresh lemon juice over the fish and sprinkle the chopped fresh herbs on top for a bright, fresh flavor.
  6. Serve: Carefully transfer the fish fillets to a serving platter and spoon the tomato and chili oil sauce generously over the top. Serve immediately for best flavor.
