Ingredients
Scale
Fish
- 500 grams Firm white fish fillets (cod or tilapia) (Fresh, boneless, and skinless)
Vegetables & Herbs
- 4 medium Ripe tomatoes (Diced)
- 4 cloves Garlic (Minced)
- 1 medium Onion (Finely chopped)
- 1 handful Fresh herbs (coriander or parsley) (Chopped, for garnish)
Other Ingredients
- 3 tablespoons Chilli oil (High-quality for best flavor)
- Salt (To taste)
- Black pepper (Freshly ground, to taste)
- 1 tablespoon Lemon juice (Freshly squeezed)
Instructions
- Prepare the Fish: Pat the fish fillets dry with paper towels and season both sides with salt and freshly ground black pepper. Set the fillets aside while you prepare the sauce.
- Sauté the Aromatics: Heat the chilli oil in a large skillet over medium heat. Add the finely chopped onion and sauté for about 5 minutes until translucent and soft. Then add the minced garlic and cook for an additional minute until fragrant.
- Cook the Tomato Sauce: Add the diced ripe tomatoes to the skillet. Stir well and cook for 10 to 12 minutes, allowing the tomatoes to break down and create a savory, thick sauce.
- Simmer the Fish: Gently place the seasoned fish fillets into the skillet on top of the tomato sauce. Spoon some sauce over the fillets, cover the skillet, and reduce to a low simmer. Cook for 8 to 10 minutes until the fish is opaque and cooked through.
- Finish with Lemon and Herbs: Remove the skillet from heat. Squeeze fresh lemon juice over the fish and sprinkle the chopped fresh herbs on top for a bright, fresh flavor.
- Serve: Carefully transfer the fish fillets to a serving platter and spoon the tomato and chili oil sauce generously over the top. Serve immediately for best flavor.

- Fresh herbs like coriander or parsley add freshness but can be substituted with basil or dill if preferred.
