A quick and easy sautéed Swiss chard recipe featuring tender greens and flavorful stems cooked with garlic and onion for a nutritious side dish.

- 2 bunches of Swiss chard (or rainbow chard)
- 1/2 medium yellow onion, diced
- 2 cloves garlic, minced
Seasonings and Oils
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- Optional – squeeze of fresh lemon juice
Instructions
- Prepare the Swiss chard: Wash the Swiss chard thoroughly to remove any grit. Trim the ends of the stems to discard broken or wilted pieces.
- Chop the chard: Separate the leaves from the stems. Roughly chop the leaves and dice the stems into 1/2 inch pieces.
- Heat the oil: Warm 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
- Sauté onion and stems: Add the diced onion to the skillet and sauté for 4 minutes until translucent. Add the chopped chard stems and continue cooking for 3 minutes until tender.
- Add garlic: Stir in the minced garlic and sauté for 30 seconds to infuse the oil with flavor.
- Cook the leaves: Add the chopped chard leaves and sauté just until wilted, about 1-2 minutes.
- Season and serve: Remove the skillet from heat, sprinkle with kosher salt and black pepper, add a squeeze of fresh lemon juice if desired, stir to combine and serve immediately.

- Use rainbow chard for a colorful presentation.
- Adjust seasoning to taste.
- Serve as a healthy side dish with grilled meats or grains.
- Can add chili flakes for a spicy kick.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
