- 1 1/2 cups dried brown or green lentils, rinsed
- 6 cups chicken broth
- 1 (14.5 oz) can diced tomatoes with juice
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 2 cups chopped kale or spinach (optional)
- 1 tbsp red wine vinegar (optional, for brightness)
Instructions
- Cook Sausage: In a large pot, cook sausage until browned; set aside.
- Sauté Vegetables: In the same pot, sauté onion, carrots, and celery until soft. Add garlic.
- Add Ingredients: Stir in lentils, broth, tomatoes, spices, and cooked sausage. Simmer until lentils are tender.

- For a vegetarian version, omit sausage and use vegetable broth.
