Sausage Gravy

  • 1/2 pound breakfast sausage
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon salt
  • 1/8 teaspoon crushed red pepper flakes (optional)

  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 4 large eggs
  • 1 tablespoon chopped fresh chives (optional, for garnish)


Instructions

  1. Preheat the Oven and Prepare Dough: Preheat your oven to 400°F (200°C) and lightly grease a large baking sheet or pizza pan. Roll out the refrigerated pizza dough and press it into the prepared pan, creating a slight edge around the border. Bake the crust for 7 minutes and then remove it from the oven; set aside.
  2. Cook Sausage and Make Gravy: In a skillet over medium heat, cook the breakfast sausage until it is browned and crumbled. Sprinkle the all-purpose flour over the sausage and stir well to coat evenly. Slowly add the whole milk while stirring continuously until the mixture thickens into a creamy sausage gravy, which takes about 3 to 4 minutes. Season with black pepper, salt, and crushed red pepper flakes if using.
  3. Assemble the Pizza: Spread the freshly made sausage gravy evenly over the partially baked pizza crust. Sprinkle the shredded mozzarella and cheddar cheeses over the top. Carefully crack the four eggs evenly spaced over the pizza.
  4. Bake to Finish: Return the assembled pizza to the oven and bake for an additional 10 to 12 minutes, or until the crust is golden brown, the eggs have set to your preferred doneness, and the cheese has fully melted.
