Description

A vibrant and flavorful roasted beetroot hummus combining tender roasted beets with creamy chickpeas and tahini, enhanced by garlic, lemon juice, and cumin. This healthy and colorful dip is perfect as an appetizer or snack, ideal for serving with pita bread, crackers, or fresh vegetables.

  • 2 medium beetroots (trimmed and washed)

Hummus Base

  • 1 can (15 ounces) chickpeas (drained and rinsed)
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 2–3 tablespoons water (as needed)

Garnish

  • Fresh parsley

Instructions

  1. Roast the beetroots: Preheat your oven to 400°F (200°C). Wrap the trimmed and washed beetroots individually in foil and place them on a baking sheet. Roast in the oven for 45 to 60 minutes, or until you can easily pierce them with a fork, indicating they are tender.
  2. Prepare the roasted beets: Remove the beets from the oven and allow them to cool slightly so they are safe to handle. Peel the skins off the beets; the skins should come off easily after roasting. Cut the peeled beets into chunks to prepare for blending.
  3. Blend the hummus: In a food processor, combine the roasted beet chunks, drained chickpeas, tahini, olive oil, lemon juice, garlic cloves, ground cumin, and salt. Blend the mixture until smooth, gradually adding 2 to 3 tablespoons of water to achieve your preferred creamy consistency.
  4. Serve and garnish: Transfer the smooth beetroot hummus to a serving bowl. Drizzle some olive oil on top, and garnish with fresh parsley for color and flavor. Serve with pita bread, crackers, or fresh vegetables as a delicious appetizer or snack.

Notes

  • For an extra smoky flavor, add a pinch of smoked paprika to the hummus before blending.
  • If desired, roast the garlic cloves alongside the beets for a milder, roasted garlic taste.
  • This hummus can be stored in an airtight container in the refrigerator for up to 5 days.
