  • 8 ounces rice noodles or thin spaghetti

  • zest and juice of 2 limes
  • 1 tablespoon soy sauce
  • 1 teaspoon honey or maple syrup
  • 1/4 teaspoon red pepper flakes (optional)

To Garnish:

  • 1/2 cup fresh cilantro (chopped)
  • 2 green onions (sliced)
  • salt and black pepper to taste
  • 1/4 cup chopped roasted peanuts
  • lime wedges for serving

Instructions

  1. Cook the Noodles: Cook the noodles according to package instructions until al dente. Drain and rinse under cold water, then set aside.
  2. Prepare the Sauce: In a skillet, sauté garlic in olive oil. Add lime zest, lime juice, soy sauce, honey, and red pepper flakes. Simmer for 1–2 minutes.
  3. Combine: Toss the noodles in the skillet with the sauce. Add cilantro and green onions. Season with salt and pepper.
  4. Serve: Serve warm, at room temperature, or chilled. Top with peanuts and lime wedges.

  • Add grilled shrimp, tofu, or shredded chicken for a heartier meal.
