- zest and juice of 2 limes
- 1 tablespoon soy sauce
- 1 teaspoon honey or maple syrup
- 1/4 teaspoon red pepper flakes (optional)
To Garnish:
- 1/2 cup fresh cilantro (chopped)
- 2 green onions (sliced)
- salt and black pepper to taste
- 1/4 cup chopped roasted peanuts
- lime wedges for serving
Instructions
- Cook the Noodles: Cook the noodles according to package instructions until al dente. Drain and rinse under cold water, then set aside.
- Prepare the Sauce: In a skillet, sauté garlic in olive oil. Add lime zest, lime juice, soy sauce, honey, and red pepper flakes. Simmer for 1–2 minutes.
