Ingredients
Scale
Main Ingredients
- 1 (14-ounce) kielbasa sausage
- 1/2 cup pineapple chunks (canned or fresh)
- 1/4 cup barbecue sauce
- 1 tablespoon brown sugar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Toothpicks (for serving)
- Chopped fresh parsley (for garnish, optional)
Instructions
- Preheat and prepare baking sheet: Preheat your oven to 400°F (200°C) and line a baking sheet with foil or parchment paper to prevent sticking and make cleanup easier.
- Slice kielbasa: Slice the kielbasa into 1/2-inch thick rounds, being careful not to slice all the way through. Leave the bottom intact to create a hasselback-style pocket for stuffing.
- Prepare pineapple chunks: Cut the pineapple chunks into small pieces so they can fit neatly into the slits of the kielbasa slices.
- Stuff pineapple: Gently stuff a small piece of pineapple into each slit of the kielbasa rounds, ensuring each piece is nicely filled.
- Make the glaze: In a small bowl, whisk together the barbecue sauce, brown sugar, Dijon mustard, garlic powder, and black pepper until well combined.
- Brush glaze on kielbasa: Generously brush the barbecue glaze over the pineapple-stuffed kielbasa slices to coat them evenly.
- Bake: Arrange the kielbasa bites on the prepared baking sheet and bake in the preheated oven for 20–25 minutes. Halfway through, baste with additional glaze to enhance flavor and caramelization.
- Serve: Remove from oven, insert toothpicks into each bite for easy serving, and garnish with chopped fresh parsley if desired. Serve warm for best taste.
Notes
- These bites are excellent as a party appetizer or a game-day snack.
- For a spicy kick, add a dash of hot sauce or cayenne pepper to the glaze mixture.
- Leftovers can be reheated in the oven or air fryer for a quick warm-up.
- Use fresh pineapple for a brighter flavor, or canned pineapple for convenience.
