Description

Pimento Cheese Stuffed Mini Peppers are a colorful and flavorful appetizer featuring sweet mini peppers filled with a creamy, tangy pimento cheese mixture. This no-cook recipe is easy to prepare, perfect for parties, gatherings, or as a quick snack that delivers a delightful combination of sharp cheddar cheese, cream cheese, and a hint of spice.

Ingredients

Scale

Pimento Cheese Filling

  • 8 oz sharp cheddar cheese, grated
  • 4 oz cream cheese, softened
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup jarred pimentos, drained and chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper, to taste

Vegetables

  • 12-15 mini sweet peppers (red, yellow, or orange), halved and deseeded

Instructions

  1. Prepare the Filling: In a medium mixing bowl, combine the grated sharp cheddar cheese, softened cream cheese, mayonnaise, Dijon mustard, chopped pimentos, garlic powder, onion powder, cayenne pepper if using, and salt and pepper to taste. Mix everything thoroughly until the mixture is creamy and well blended.
  2. Prepare the Peppers: Slice each mini sweet pepper in half lengthwise and carefully remove the seeds and membranes. Leave the stems on if you prefer, as they can make handling and presentation easier.
  3. Stuff the Peppers: Using a spoon or a piping bag, fill each mini pepper half with the prepared pimento cheese mixture, packing it in generously so each pepper is nicely filled.
  4. Serve: Arrange the stuffed mini peppers on a serving platter. Serve them immediately for the freshest taste or refrigerate for about 30 minutes to allow the flavors to meld before serving.

Notes

  • You can prepare the pimento cheese filling a day ahead and refrigerate it to save time.
  • For extra garnish, sprinkle with chopped fresh herbs like parsley or chives.
  • If you prefer a spicier kick, increase the cayenne pepper or add a dash of hot sauce to the filling.
  • Keep the stuffed peppers refrigerated if not serving immediately to maintain freshness and texture.
