Description

These Pecan Pie Bites are mini, bite-sized versions of the classic pecan pie. Made with a flaky pie crust filled with a rich, sweet pecan mixture, they offer a perfect single-serving dessert that’s easy to prepare and bake. Ideal for parties or an indulgent treat, these bites combine the delightful crunch of pecans with a buttery, caramel-like filling.

Pie Crust

  • 1 refrigerated pie crust (or homemade)

Filling

  • 1 cup chopped pecans
  • 1/2 cup brown sugar
  • 1/3 cup corn syrup
  • 1 egg, beaten
  • 1 tbsp melted butter
  • 1 tsp vanilla extract
  • Pinch of salt


Instructions

  1. Preheat Oven and Prepare Pan: Preheat the oven to 350°F (175°C). Grease a mini muffin pan thoroughly to prevent sticking.
  2. Shape the Crusts: Roll out the pie crust on a clean surface. Using a cookie cutter, cut out small circles slightly larger than the muffin pan cups. Press each circle gently into the mini muffin pan to form small pie crust shells.
  3. Mix Filling: In a medium bowl, combine chopped pecans, brown sugar, corn syrup, beaten egg, melted butter, vanilla extract, and a pinch of salt. Stir until all ingredients are well blended into a smooth filling.
  4. Fill the Crusts: Spoon the pecan filling evenly into each crust shell, filling each nearly to the top but avoiding overflow.
  5. Bake: Place the muffin pan in the preheated oven and bake for 20 to 25 minutes, or until the filling is set and the crust is golden brown.
  6. Cool and Serve: Remove from oven and let the pecan pie bites cool in the pan for at least 10 minutes. Once cooled, carefully remove the bites from the pan and serve.
