These Pecan Pie Bites are mini, bite-sized versions of the classic pecan pie. Made with a flaky pie crust filled with a rich, sweet pecan mixture, they offer a perfect single-serving dessert that’s easy to prepare and bake. Pie Crust
- 1 refrigerated pie crust (or homemade)
Filling
- 1 cup chopped pecans
- 1/2 cup brown sugar
- 1/3 cup corn syrup
- 1 egg, beaten
- 1 tbsp melted butter
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat Oven and Prepare Pan: Preheat the oven to 350°F (175°C). Grease a mini muffin pan thoroughly to prevent sticking.
- Shape the Crusts: Roll out the pie crust on a clean surface. Using a cookie cutter, cut out small circles slightly larger than the muffin pan cups. Press each circle gently into the mini muffin pan to form small pie crust shells.
- Mix Filling: In a medium bowl, combine chopped pecans, brown sugar, corn syrup, beaten egg, melted butter, vanilla extract, and a pinch of salt. Stir until all ingredients are well blended into a smooth filling.
- Fill the Crusts: Spoon the pecan filling evenly into each crust shell, filling each nearly to the top but avoiding overflow.
- Bake: Place the muffin pan in the preheated oven and bake for 20 to 25 minutes, or until the filling is set and the crust is golden brown.
- Cool and Serve: Remove from oven and let the pecan pie bites cool in the pan for at least 10 minutes. Once cooled, carefully remove the bites from the pan and serve.
Notes
- Use a cookie cutter slightly larger than the muffin cup so the crust fits snugly without tearing.
- Allow the pies to cool completely for best filling texture before serving.
