Description

Delightful Nutella Pastry Bites featuring a buttery, flaky pastry dough filled with creamy Nutella. These bite-sized treats are perfect for dessert or a sweet snack, baked to golden perfection and finished with a dusting of powdered sugar for a touch of elegance.

Ingredients

Scale

Pastry Dough

  • 1 cup salted butter, cold and cubed
  • 2 cups all-purpose flour
  • 6 1/2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 1 large egg

Filling & Finishing

  • 1 cup Nutella (hazelnut cream)
  • 1-2 tablespoons powdered sugar (for dusting)

Egg Wash

  • 1 large egg
  • 1-2 tablespoons water or milk

Instructions

  1. Make the dough: In a food processor, pulse together the flour, sugar, and salt with the cold butter, egg yolk, and egg. Continue pulsing until the mixture just comes together and forms a dough.
  2. Knead the dough: Gently knead the dough on a lightly floured surface to bring it into a smooth ball, being careful not to overwork it to maintain a tender texture.
  3. Refrigerate the dough: Wrap the dough in plastic wrap and refrigerate for 30 minutes to allow it to firm up and become easier to roll out.
  4. Prepare Nutella filling: While chilling the dough, scoop small teaspoons of Nutella onto a parchment-lined tray and freeze for 20-30 minutes until firm for easier handling.
  5. Preheat oven and prepare baking sheet: Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  6. Roll out dough: Roll the chilled dough on a floured surface to about 1/8-inch thickness.
  7. Cut dough circles: Use a 3 1/2-inch round cutter or a glass to cut circles from the rolled dough.
  8. Assemble pastry bites: Place one frozen scoop of Nutella in the center of each dough circle.
  9. Top and seal: Take another dough circle, cut small slits for steam release, place it over the Nutella, and gently press edges with a fork to seal securely.
  10. Apply egg wash: Whisk together the egg and water or milk, then brush the tops of pastries for a golden, glossy finish.
  11. Bake: Bake in the preheated oven for 20-25 minutes until golden brown and puffed.
  12. Finish and serve: Allow to cool slightly, dust with powdered sugar if desired, and serve warm or at room temperature.

Notes

  • Freezing the Nutella scoops helps prevent the filling from leaking during baking.
  • Slitting the top dough circle allows steam to escape, preventing sogginess.
  • Use cold butter and avoid overworking the dough to achieve a flaky pastry.
  • Pastry bites can be stored in an airtight container for up to 2 days; reheat briefly before serving.
  • For a dairy-free version, substitute butter and milk with plant-based alternatives and use a vegan chocolate spread.
