Instructions
- Combine Ingredients: In a large mixing bowl, combine the old-fashioned oats, natural peanut butter, honey, mini chocolate chips, mini M&Ms, vanilla extract, and a pinch of salt to start forming the mixture.
- Mix Well: Stir the mixture thoroughly until well combined. Adjust the texture by adding more oats if too sticky, or more peanut butter or honey if too dry.
- Chill Mixture: Place the bowl in the refrigerator and chill the mixture for about 30 minutes to firm it up for shaping.
- Form Bites: After chilling, roll the mixture into small bite-sized balls, approximately 1 inch in diameter.
- Set the Bites: Arrange the energy bites on a baking sheet lined with parchment paper and refrigerate for another 30 minutes so they set properly.
- Store: Keep the energy bites in an airtight container in the refrigerator for up to 1 week to maintain freshness.
