- 1/2 cup rolled oats
- 1 tablespoon chia seeds
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup plain or vanilla Greek yogurt
- 1–2 teaspoons maple syrup or honey (to taste)
- 1/4 teaspoon peppermint extract
- 2 tablespoons mini chocolate chips
- A few drops of natural green food coloring (optional)

Instructions
- Combine Ingredients: In a jar or airtight container, mix the rolled oats, chia seeds, milk, Greek yogurt, maple syrup or honey, and peppermint extract thoroughly until fully combined.
- Add Color and Chocolate: If desired, add a few drops of natural green food coloring for a minty green hue. Gently fold in the mini chocolate chips to the mixture.
- Refrigerate: Seal the container tightly and place it in the refrigerator overnight or for at least 4 hours to allow the oats and chia seeds to soak and soften.
- Serve: In the morning, stir the oats well and top with extra chocolate chips or fresh crushed mint leaves before serving for added flavor and texture.
