1 tablespoon olive oil;
1 small onion, finely chopped;
2 cloves garlic, minced;
1/2 teaspoon dried thyme;
1/2 teaspoon dried rosemary;
1 pound minced (ground) beef;
1 tablespoon tomato paste;
1 teaspoon Worcestershire sauce;
Salt and pepper to taste;
1/2 cup breadcrumbs;
1 egg, beaten
For Assembly:
1 sheet puff pastry, thawed;
1 tablespoon Dijon mustard (optional);
Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven and prepare baking sheet: Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Cook the filling: Heat olive oil in a skillet, sauté onion, garlic, thyme, and rosemary. Add beef, tomato paste, Worcestershire sauce, salt, and pepper. Cook until browned and combine breadcrumbs and egg.
- Assemble the Wellington: Roll out puff pastry, spread Dijon mustard if desired, add beef mixture, fold pastry, seal edges, brush with egg wash, score the top.
- Bake: Bake for 25–30 minutes until golden brown. Let rest before slicing and garnish with parsley.

- You can prepare the filling a day ahead and refrigerate before assembling.
