Ground Beef Stir-Fry:
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small red onion (thinly sliced)
- 2 cloves garlic (minced)
- 1 zucchini (chopped)
- 1 red bell pepper (chopped)
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
To Garnish:
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- Juice of 1/2 lemon
Instructions
- Heat olive oil: Heat olive oil in a large skillet over medium-high heat.
- Cook beef: Add the ground beef and cook for 5–6 minutes, breaking it up as it browns. Drain excess fat if needed.
- Add vegetables: Add sliced onion, cook for 2 minutes. Stir in garlic, zucchini, and bell pepper. Cook for 5–7 minutes until tender.
- Season and finish: Season with cumin, paprika, oregano, salt, and pepper. Cook for 1–2 minutes. Remove from heat, stir in lemon juice.
- Top and serve: Top with feta and parsley. Serve warm as-is or over rice, couscous, or in pita wraps.
