Description

  • 2 pounds russet potatoes, peeled and cubed
  • 1/4 cup olive oil
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper

For the Chicken:

  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • Nonstick cooking spray

Additional Ingredients:

  • 1 1/2 cups shredded cheddar cheese
  • 1 cup cooked and crumbled bacon
  • 1/2 cup chopped green onions

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and grease a 9×13-inch baking dish with nonstick spray.
  2. Prepare the Potatoes: In a large bowl, toss the cubed potatoes with olive oil, ranch seasoning, garlic powder, paprika, and black pepper. Spread them in the baking dish and bake for 25–30 minutes, stirring halfway through.
  3. Season the Chicken: Season the chicken with salt and pepper. After 30 minutes, add the chicken to the dish and bake for another 20–25 minutes.
