Description

This Lemon Basil Chicken recipe features tender, boneless chicken breasts marinated in a vibrant mix of fresh lemon juice, zest, garlic, and fragrant basil. Grilled to perfection, it offers a tangy and herbaceous flavor that’s perfect for a healthy and delicious main course, ideal for summer dinners or any time you want a light, refreshing meal.

Ingredients

Scale

Chicken and Marinade

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/4 cup fresh lemon juice
  • 2 teaspoons lemon zest
  • 3 cloves garlic, minced
  • 1/3 cup chopped fresh basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Garnish

  • Lemon slices for garnish
  • Extra fresh basil (optional)

Instructions

  1. Prepare the Chicken: Pound the chicken breasts to even thickness to ensure they cook evenly and more quickly.
  2. Make the Marinade: In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, chopped basil, salt, black pepper, and red pepper flakes if using.
  3. Marinate the Chicken: Place the chicken breasts in a shallow dish or resealable bag and pour the marinade over them. Refrigerate for at least 30 minutes, or up to 4 hours to infuse the flavors.
  4. Preheat the Grill or Skillet: Heat a grill or skillet over medium-high heat while the chicken marinates.
  5. Cook the Chicken: Remove the chicken breasts from the marinade and cook on the grill or skillet for 5–7 minutes per side, until the internal temperature reaches 165°F and the chicken is cooked through.
  6. Rest and Serve: Let the chicken rest for 5 minutes before slicing. Garnish with lemon slices and extra basil if desired, then serve.

Notes

  • Reserve 2 tablespoons of the marinade before adding the chicken to drizzle over the cooked chicken for extra flavor.
  • This dish pairs excellently with rice, quinoa, or a fresh green salad to complete the meal.
