Ingredients
Scale
Chicken and Marinade
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/4 cup fresh lemon juice
- 2 teaspoons lemon zest
- 3 cloves garlic, minced
- 1/3 cup chopped fresh basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
Garnish
- Lemon slices for garnish
- Extra fresh basil (optional)
Instructions
- Prepare the Chicken: Pound the chicken breasts to even thickness to ensure they cook evenly and more quickly.
- Make the Marinade: In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, chopped basil, salt, black pepper, and red pepper flakes if using.
- Marinate the Chicken: Place the chicken breasts in a shallow dish or resealable bag and pour the marinade over them. Refrigerate for at least 30 minutes, or up to 4 hours to infuse the flavors.
- Preheat the Grill or Skillet: Heat a grill or skillet over medium-high heat while the chicken marinates.
- Cook the Chicken: Remove the chicken breasts from the marinade and cook on the grill or skillet for 5–7 minutes per side, until the internal temperature reaches 165°F and the chicken is cooked through.
- Rest and Serve: Let the chicken rest for 5 minutes before slicing. Garnish with lemon slices and extra basil if desired, then serve.
Notes
- Reserve 2 tablespoons of the marinade before adding the chicken to drizzle over the cooked chicken for extra flavor.
- This dish pairs excellently with rice, quinoa, or a fresh green salad to complete the meal.
