Sandwich:

  • 4 slices of sourdough or white bread
  • 4 ounces cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 jalapeños, seeded and finely chopped (use more or less to taste)
  • 4 slices cooked bacon, crumbled (optional)
  • 2 tablespoons butter, softened


Instructions

  1. Prepare Cream Cheese Filling: In a small bowl, mix the cream cheese with chopped jalapeños and crumbled bacon if using.
  2. Assemble Sandwiches: Spread the cream cheese mixture evenly on two slices of bread. Sprinkle the shredded cheddar and mozzarella on top, then cover with the remaining bread slices to form sandwiches.
  3. Cook Grilled Cheese: Butter the outside of each slice of bread. Heat a skillet over medium heat, place sandwiches in the pan, and cook for 3–4 minutes per side until golden brown and cheese is melted.
