Description

This Irresistible Sweet Hawaiian Crockpot Chicken is a tropical delight that is easy to prepare in a slow cooker. Tender chicken cooked in a sweet and savory pineapple sauce with colorful bell peppers, this dish is bursting with flavor and perfect served over rice or noodles.

Ingredients

Scale

Chicken:

  • 2 pounds boneless, skinless chicken thighs or breasts (cut into large chunks)

Sauce:

  • 1 cup pineapple juice
  • ½ cup brown sugar
  • ½ cup low-sodium soy sauce
  • 1 tablespoon fresh ginger (grated)
  • 2 cloves garlic (minced)

Thickening:

  • 1 tablespoon cornstarch
  • 2 tablespoons water

Add-ins:

  • 1 ½ cups pineapple chunks (fresh or canned, drained)
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • Sliced green onions and sesame seeds (optional for garnish)

Instructions

  1. Prepare the Sauce: In a medium bowl, whisk together pineapple juice, brown sugar, soy sauce, ginger, and garlic until combined.
  2. Cook in Crockpot: Place the chicken in the crockpot and pour the sauce over it. Cook on low for 4–5 hours or on high for 2–3 hours until chicken is tender.
  3. Add Vegetables: In the last 30 minutes of cooking, add pineapple chunks and bell peppers.
  4. Thicken the Sauce: Make a slurry with cornstarch and water, then stir into the crockpot. Cook until sauce thickens.
  5. Serve: Serve over rice or noodles, garnished with green onions and sesame seeds if desired.

Notes

  • For a spicier kick, add red pepper flakes or sriracha to the sauce.
  • You can use canned pineapple juice and chunks to save time.
  • This dish reheats well and is perfect for meal prep.
