For the Hot Honey Chicken:
- 1 pound boneless skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 cup hot honey (store-bought or homemade)
For Serving:
- 2 cups cooked rice or quinoa
- 1 cup shredded cabbage or coleslaw mix
- 1 avocado, sliced
- 1/2 cup pickled red onions
- 2 green onions, sliced
- Lime wedges for serving
Instructions
- Prepare the Chicken: In a bowl, toss the chicken with olive oil, smoked paprika, garlic powder, salt, black pepper, and cayenne if using. Cook in a skillet until golden and cooked through.
- Glaze with Hot Honey: Drizzle hot honey over the chicken in the skillet. Cook for an additional minute until sticky and caramelized.
- Assemble the Bowls: Divide cooked rice or quinoa among serving bowls. Top with hot honey chicken, cabbage, avocado, pickled onions, and green onions. Squeeze lime juice over the top and serve warm.
Notes
- To make homemade hot honey, mix 1/4 cup honey with 1–2 teaspoons hot sauce or red pepper flakes and warm it slightly.
- These bowls are excellent for meal prep and can be made ahead of time and reheated.
