These Hot Honey Chicken Bowls are a delicious combination of sweet, spicy, and savory flavors. Tender chicken coated in a sticky hot honey glaze served over rice with avocado, pickled onions, and cabbage.

Ingredients

Scale

For the Hot Honey Chicken:

  • 1 pound boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 cup hot honey (store-bought or homemade)

For Serving:

  • 2 cups cooked rice or quinoa
  • 1 cup shredded cabbage or coleslaw mix
  • 1 avocado, sliced
  • 1/2 cup pickled red onions
  • 2 green onions, sliced
  • Lime wedges for serving

Instructions

  1. Prepare the Chicken: In a bowl, toss the chicken with olive oil, smoked paprika, garlic powder, salt, black pepper, and cayenne if using. Cook in a skillet until golden and cooked through.
  2. Glaze with Hot Honey: Drizzle hot honey over the chicken in the skillet. Cook for an additional minute until sticky and caramelized.
  3. Assemble the Bowls: Divide cooked rice or quinoa among serving bowls. Top with hot honey chicken, cabbage, avocado, pickled onions, and green onions. Squeeze lime juice over the top and serve warm.

Notes

  • To make homemade hot honey, mix 1/4 cup honey with 1–2 teaspoons hot sauce or red pepper flakes and warm it slightly.
  • These bowls are excellent for meal prep and can be made ahead of time and reheated.
