Description

Roasted Sweet Potatoes

  • 3 cups cubed sweet potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Beef

  • 1 pound lean ground beef
  • 1 tablespoon taco seasoning

Toppings

  • 2 cups cottage cheese
  • 1 large avocado, diced
  • 4 tablespoons hot honey

Optional

  • 4 cups roughly chopped kale
  • 1 tablespoon olive oil (for massaging kale)


Instructions

  1. Roast Sweet Potatoes: Preheat your oven to 400°F (200°C). Toss the cubed sweet potatoes with 1 tablespoon of olive oil, ground cinnamon, salt, and black pepper on a baking sheet. Spread out evenly and roast in the oven for 18 to 22 minutes or until the sweet potatoes are fork-tender and cooked through.
  2. Cook the Ground Beef: While the sweet potatoes are roasting, heat a frying pan over medium-high heat. Add the lean ground beef and cook until it starts to brown. Sprinkle in the taco seasoning and stir well to combine. Continue cooking until the beef is fully browned and cooked through, about 5-7 minutes.
  3. Assemble the Bowls: Divide the cooked sweet potatoes and ground beef evenly between four bowls. Add 1/2 cup of cottage cheese and a quarter of the diced avocado to each bowl. Drizzle 1 tablespoon of hot honey over each bowl for a sweet and spicy finish.
  4. Prepare Optional Kale: If using kale, massage the roughly chopped kale with 1 tablespoon of olive oil for about 30 seconds to soften and mellow the leaves. Add the massaged kale to each bowl as a fresh, healthy green addition.
