Ingredients
Scale
Chicken
- 1 pound chicken breasts
- ½ teaspoon salt (to taste)
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
Marinade & Glaze
- ½ cup good quality balsamic vinegar
- ¼ cup regular sodium chicken broth
- 2 tablespoons honey
- 2 cloves garlic, crushed
- 1 teaspoon fresh rosemary, finely chopped
Instructions
- Prep chicken: Pound the chicken breasts to about 1-inch thickness to ensure even cooking. Then cut the chicken into 4-ounce portions for individual servings.
- Make the marinade: In a medium bowl, whisk together balsamic vinegar, chicken broth, honey, crushed garlic, salt, black pepper, and finely chopped rosemary. Set aside ½ cup of this marinade separately for glazing later.
- Marinate chicken: Add the remaining marinade (approx. ¼ cup) to a 1-gallon ziplock bag along with the chicken breasts. Seal the bag and marinate the chicken for 15 to 30 minutes to let flavors infuse.
- Cook the chicken: Heat olive oil in a large cast-iron skillet over medium-high heat. Remove chicken breasts from the marinade, letting the excess drip off, then place them in the hot skillet. Cook the chicken for 3-4 minutes on each side, or until fully cooked through, with an internal temperature of 165°F (74°C).
- Reduce the sauce: While chicken cooks, pour the reserved ½ cup of marinade into a small saucepan or skillet. Bring it to a boil, then reduce to a simmer and cook for 10 minutes until it reduces by half and thickens into a glaze.
- Serve: Plate the cooked chicken breasts and drizzle the balsamic glaze over the top. Serve immediately and enjoy the balance of sweet and tangy flavors.
Notes
- Pounding the chicken to an even thickness ensures it cooks evenly and remains juicy.
- Use a meat thermometer to confirm the chicken reaches 165°F for safe consumption.
- Fresh rosemary gives a vibrant flavor, but dried rosemary can be substituted if needed (use half the amount).
- Letting the glaze reduce properly enhances its thickness and intensifies the flavor.
- This chicken pairs well with roasted vegetables, rice, or a fresh green salad for a complete meal.
