Description

Honey Butter Cornbread Poppers are delightful mini cornbread bites that can be fried or baked to golden perfection. Instructions

  1. Prepare the dry ingredients: In a large mixing bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, baking soda, and salt until evenly combined.
  2. Mix the wet ingredients: In a separate bowl, beat the buttermilk, large egg, melted unsalted butter, and honey until smooth and well incorporated.
  3. Combine wet and dry: Pour the wet ingredients into the dry mixture and stir gently just until the batter comes together without overmixing to keep it tender.
  4. Add optional ingredients: Fold in the shredded cheddar cheese and finely diced jalapeño if you desire a cheesy, spicy kick in your poppers.
  5. Fry the poppers: Heat 2–3 inches of oil in a deep skillet or saucepan to 350°F (175°C). Using a spoon, carefully drop spoonfuls of batter into the hot oil. Fry for 2–3 minutes, turning occasionally to ensure even golden browning and full cooking. Remove with a slotted spoon and drain on paper towels.
