- 1/4 cup unsalted butter, melted
- 2 tablespoons honey

Instructions
- Prepare the dry ingredients: In a large mixing bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, baking soda, and salt until evenly combined.
- Mix the wet ingredients: In a separate bowl, beat the buttermilk, large egg, melted unsalted butter, and honey until smooth and well incorporated.
- Combine wet and dry: Pour the wet ingredients into the dry mixture and stir gently just until the batter comes together without overmixing to keep it tender.
- Add optional ingredients: Fold in the shredded cheddar cheese and finely diced jalapeño if you desire a cheesy, spicy kick in your poppers.
- Fry the poppers: Heat 2–3 inches of oil in a deep skillet or saucepan to 350°F (175°C). Using a spoon, carefully drop spoonfuls of batter into the hot oil. Fry for 2–3 minutes, turning occasionally to ensure even golden browning and full cooking. Remove with a slotted spoon and drain on paper towels.
- Bake the poppers (alternative method): Preheat your oven to 400°F (200°C). Grease a mini muffin tin and spoon batter into each cup, filling about 3/4 full. Bake for 10–12 minutes or until the poppers are golden brown and a toothpick inserted comes out clean.
- Serve: Serve the warm cornbread poppers drizzled with honey butter or alongside chili or BBQ dishes for a delightful appetizer or side dish experience.
