Soup Base & Vegetables

- 2 cups baby bok choy or spinach
- 1/2 cup sliced mushrooms (optional)
- Salt and pepper, to taste
- Green onions and fresh cilantro, for garnish
Instructions
- Prepare the wontons: In a mixing bowl, combine ground chicken, finely chopped green onions, minced garlic, soy sauce, sesame oil, grated ginger, and white pepper. Mix thoroughly until the ingredients are evenly incorporated.
- Fill and shape the wontons: Place a small spoonful of the chicken mixture in the center of each wonton wrapper. Moisten the edges with water, fold the wrapper into a triangle shape, and press firmly to seal the edges. Then, bring the opposite corners of the triangle together to form a neat bundle, ensuring the filling is secure inside.
- Prepare the soup base: In a large pot, heat the chicken broth over medium heat. Add soy sauce, sesame oil, grated ginger, and minced garlic to the broth, stirring gently to combine all flavorings evenly.
- Simmer vegetables: Allow the broth to simmer gently for 5 to 7 minutes so the flavors meld. Add the baby bok choy and optional sliced mushrooms into the broth. Season with salt and pepper according to taste.
- Cook the wontons: Carefully drop the prepared wontons into the simmering soup. Let them cook for 4 to 5 minutes, or until they float to the surface and the chicken filling is fully cooked through.
- Serve: Ladle the hot soup into bowls, making sure each serving contains both wontons and vegetables. Garnish with additional chopped green onions and fresh cilantro. Serve immediately while warm.
