Description

These homemade sourdough dinner rolls are perfectly fluffy with a delicate sourdough tang. Made with a bubbly active sourdough starter, all-purpose flour, and enriched with butter and sugar for a soft, tender crumb, these rolls are ideal for dinner or any meal requiring a fresh, flavorful bread.

Ingredients

Scale

Starter Mixture

  • 1 cup Active Sourdough Starter (bubbly and doubled in size)
  • 1 cup Lukewarm Water

Dough Ingredients

  • 4 cups All-Purpose Flour (measured carefully)
  • 2 teaspoons Salt
  • 4 tablespoons Unsalted Butter (softened)
  • 2 tablespoons Sugar

Instructions

  1. Combine Starter and Water: In a large mixing bowl, gently stir together 1 cup of active sourdough starter and 1 cup of lukewarm water until combined.
  2. Add Flour Gradually: Slowly add the 4 cups of all-purpose flour one cup at a time, mixing continuously until the dough begins to form.
  3. Rest the Dough: Allow the mixture to rest for about 30 minutes so the flour can fully hydrate and gluten starts to develop.
  4. Add Remaining Ingredients and Knead: Incorporate 2 teaspoons of salt, 4 tablespoons of softened unsalted butter, and 2 tablespoons of sugar into the dough. Knead for approximately 10 minutes until the dough is smooth and elastic.
  5. First Rise: Shape the dough into a ball and place it into a greased bowl. Cover with a damp cloth and let it rise for 4 to 6 hours until doubled in size.
  6. Shape Rolls: Punch down the risen dough and divide it into 12 equal pieces. Shape each piece into a smooth round ball.
  7. Second Rise: Arrange the rolls in a greased baking dish, cover, and let rise for an additional 1 to 2 hours.
  8. Preheat Oven and Prep: Preheat the oven to 375°F (190°C). Optionally, brush the tops of the rolls with melted butter for a richer crust.
  9. Bake: Bake in the preheated oven for 20 to 25 minutes, until the rolls are golden brown and sound hollow when tapped. Cool slightly before serving.

Notes

  • Ensure the sourdough starter is active and bubbly for best results.
  • Do not add too much flour; dough should be slightly sticky for a soft texture.
  • Butter can be brushed on the rolls after baking for extra flavor and softness.
  • Allow proper rising time for light, fluffy rolls—patience is key.
  • Store leftover rolls in an airtight container to maintain freshness.
