Ingredients
Scale
Crust
- 1 cup almond flour
- 1/4 cup coconut oil, melted
- 2 tbsp maple syrup
- 1/4 tsp salt
Caramel Layer
- 1/2 cup medjool dates, pitted
- 2 tbsp almond butter
- 1/4 cup coconut milk
- 1/4 cup coconut sugar
- 1/2 tsp vanilla extract
Chocolate Topping
- 1 cup dark chocolate chips (70% cacao or higher)
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners to prepare for baking the crust.
- Make the Crust Mixture: In a bowl, combine almond flour, melted coconut oil, maple syrup, and salt. Mix until the mixture becomes crumbly and uniform.
- Form the Crust: Press the crumbly mixture evenly into the bottom of each muffin cup, creating a solid base layer.
- Bake the Crust: Bake the crusts for 8-10 minutes until lightly golden. Remove from the oven and allow to cool completely.
- Prepare the Caramel: In a food processor, blend pitted medjool dates, almond butter, coconut milk, coconut sugar, and vanilla extract until the mixture is smooth to create the caramel layer.
- Assemble the Caramel Layer: Spread the smooth caramel evenly over each cooled crust. Place the muffin tin in the freezer for 15 minutes to help set the caramel.
- Melt the Chocolate: Melt the dark chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring between each until completely smooth.
- Add Chocolate Topping: Pour the melted chocolate over the caramel layer, spreading it evenly. Refrigerate the assembled cups for 30 minutes until the chocolate sets completely.
- Serve: Remove the Twix cups from the muffin liners and serve chilled for a refreshing and healthy treat.
Notes
- For a nut-free version, substitute almond flour and almond butter with appropriate alternatives like sunflower seed flour and sunflower seed butter.
- Make sure to use medjool dates as they provide a naturally sweet and rich caramel flavor.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- Use a high-quality dark chocolate with at least 70% cacao for the best flavor and health benefits.
- Freezing the caramel layer helps to keep it firm and prevent mixing with the chocolate layer.
