Description

These Halloween Shredded Chicken & Rice Stuffed Peppers are a festive and delicious way to celebrate the spooky season. Colorful bell peppers are hollowed out and carved like jack-o-lanterns, then stuffed with a flavorful mixture of Mexican rice, shredded chicken, black beans, and cheddar cheese. Baked until tender and cheesy, these stuffed peppers make a fun, crowd-pleasing entrée perfect for Halloween gatherings.

Ingredients

Scale

Peppers

  • 4 bell peppers (orange, green, or your choice of color)

Filling

  • 2 cups Mexican rice (cooked)
  • 1 shredded chicken breast (cooked)
  • 1 cup shredded cheddar cheese
  • 1 can black beans, rinsed and drained

Instructions

  1. Prepare Peppers: Preheat your oven to 350°F (175°C). Bring a large pot of water to a boil. Rinse the peppers, slice off the tops, and hollow out the insides by removing seeds and white membranes. For a spooky touch, carve jack-o-lantern faces into each pepper.
  2. Blanch Peppers: Place the peppers and their tops into the boiling water for about 5 minutes until they are tender but still firm. Remove them and set aside to cool slightly.
  3. Mix Filling: In a large bowl, combine the cooked Mexican rice, shredded chicken, black beans, and 1 cup of shredded cheddar cheese. Mix well to evenly distribute the ingredients.
  4. Stuff Peppers: Fill each pepper with the chicken and rice mixture. For extra cheesiness, sprinkle additional shredded cheddar cheese on top. Place the pepper tops back on to cover.
  5. Bake: Arrange the stuffed peppers upright in a baking dish and bake in the preheated oven for 30 minutes, or until the cheese is melted and the peppers are tender.
  6. Serve: Remove from the oven and enjoy these spooky jack-o-lantern stuffed peppers at your Halloween gathering!

Notes

  • Use bell peppers of assorted colors for a festive presentation.
  • Carving the peppers like jack-o-lanterns adds a fun Halloween touch.
  • Make sure not to overcook the peppers during blanching; they should remain firm to hold the filling.
  • You can substitute Mexican rice with any seasoned rice blend of your choice.
  • Leftover filling can be used as a topping for tacos or burritos.
