Description

Grilled Chicken Pineapple Skewers are a perfect balance of sweet and savory flavors, ideal for summer grilling. Juicy chicken pieces marinated in a tangy soy-honey-lime mixture are threaded with fresh pineapple, bell pepper, and red onion, then grilled to perfection for a deliciously caramelized and flavorful meal.

Ingredients

Scale

Marinade & Chicken

  • 2 chicken breasts (or thighs), cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground ginger (optional)
  • Salt and pepper, to taste

Skewers

  • 1 fresh pineapple, peeled, cored, and cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch chunks (optional)
  • 1/2 red onion, cut into 1-inch chunks (optional)
  • Wooden skewers or metal skewers

Instructions

  1. Prepare the Marinade: In a large mixing bowl, whisk together soy sauce, olive oil, honey, lime juice, minced garlic, and ground ginger if using. Season with salt and pepper to taste. Add the cubed chicken and coat thoroughly. Cover and refrigerate for at least 30 minutes or up to 2 hours to let the flavors meld.
  2. Prep the Skewer Ingredients: While the chicken marinates, cut the pineapple, bell pepper, and red onion into 1-inch pieces. If using wooden skewers, soak them in water for 10 to 15 minutes to prevent burning on the grill.
  3. Assemble the Skewers: Thread the marinated chicken pieces onto the skewers, alternating with pineapple chunks, bell pepper, and red onion to create a colorful and appealing pattern.
  4. Grill the Skewers: Preheat your grill to medium-high heat. If desired, brush the skewers with leftover marinade. Grill the skewers for about 4 to 5 minutes per side, turning once, until the chicken is cooked through to an internal temperature of 165°F (74°C) and the pineapple is nicely caramelized.
  5. Rest and Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Serve warm, pairing with rice, salad, or grilled vegetables for a complete and delightful meal.

Notes

  • For a spicier version, add a pinch of chili flakes or some chopped fresh chili to the marinade.
  • If you don’t have a grill, you can broil the skewers in the oven for similar caramelization.
  • Soaking wooden skewers is crucial to prevent them from burning on the grill.
  • Use chicken thighs instead of breasts for juicier and more flavorful results.
  • Ensure chicken pieces are uniformly cut to cook evenly on the skewers.
