Description

This Grilled Asparagus Caesar Salad is a fresh and flavorful twist on the classic Caesar salad, featuring tender, charred asparagus grilled to perfection and tossed with crisp romaine lettuce, crunchy croutons, and creamy Caesar dressing. It’s a quick and easy recipe perfect for a light lunch or elegant side dish.

Ingredients

Scale

Vegetables

  • 1 bunch asparagus (about 1 lb)
  • 1 head romaine lettuce

Dressing & Toppings

  • ½ cup Caesar dressing
  • ¼ cup freshly grated Parmesan cheese
  • 1 cup croutons

Others

  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat Grill: Preheat your grill to medium-high heat, approximately 400°F (200°C), ensuring it is hot enough to char the asparagus evenly without burning.
  2. Prepare Asparagus: Trim the woody ends off the asparagus stalks. Toss them with olive oil, salt, and pepper until evenly coated to enhance flavor and prevent sticking on the grill.
  3. Grill Asparagus: Place the asparagus directly on the grill grates. Cook for 5-7 minutes until tender with char marks, turning halfway through to ensure even grilling.
  4. Combine Salad Base: In a large bowl, chop the romaine lettuce and add the croutons. Drizzle the Caesar dressing over the mixture and toss thoroughly to coat all leaves and croutons.
  5. Add Grilled Asparagus: Chop the grilled asparagus into bite-sized pieces and add them to the salad along with the freshly grated Parmesan cheese. Toss gently to combine all ingredients.
  6. Serve: Serve the salad immediately, garnished with extra Parmesan cheese if desired for an additional burst of flavor.

Notes

  • For extra smoky flavor, you can grill the asparagus over charcoal.
  • Use freshly grated Parmesan for the best taste and texture.
  • To make it vegetarian, ensure the Caesar dressing does not contain anchovies or substitute with a vegetarian-friendly dressing.
  • Serve immediately to maintain the crispness of lettuce and crunchiness of croutons.
