Description

A delicious gourmet chicken pesto sourdough sandwich featuring grilled chicken breasts, fresh pesto sauce, ripe tomato slices, mozzarella cheese, and peppery arugula, all grilled to melty perfection on hearty sourdough bread.

Ingredients

Scale

Bread and Spread

  • 4 slices of sourdough bread
  • 4 tablespoons pesto sauce (homemade or store-bought)

Filling

  • 2 boneless, skinless chicken breasts, grilled and sliced
  • 1 ripe tomato, thinly sliced
  • 1 cup fresh arugula leaves
  • 4 slices of mozzarella cheese

For Grilling

  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat the grill pan: Preheat a grill pan or skillet over medium heat, ensuring it is hot enough to grill the sandwich evenly.
  2. Spread pesto on bread: Generously spread pesto sauce on one side of each slice of sourdough bread to infuse flavor across the sandwich.
  3. Add grilled chicken: Layer the sliced grilled chicken breasts over the pesto-covered side of the bread evenly.
  4. Add cheese and season: Place slices of mozzarella cheese on top of the chicken, then season with a pinch of salt and freshly ground black pepper for enhanced taste.
  5. Layer tomato and arugula: Add a layer of thinly sliced ripe tomatoes, followed by a handful of fresh arugula leaves to add freshness and crunch.
  6. Assemble sandwich: Top the sandwich with the remaining slice of sourdough bread, ensuring the pesto side faces down to meet the filling.
  7. Brush with olive oil: Brush the outside of the assembled sandwich generously with olive oil to help create a golden, crispy crust when grilled.
  8. Grill the sandwich: Grill the sandwich on the preheated pan for 3 to 4 minutes per side. Press down gently with a spatula to ensure even grilling and melting of the cheese, until the bread is toasted and the cheese is melted.
  9. Serve warm: Slice the sandwich in half and serve immediately while warm and melty for the best experience.

Notes

  • Use homemade pesto for a fresher flavor or store-bought for convenience.
  • Grilling the chicken beforehand enhances the sandwich but leftover grilled chicken can also be used.
  • Olive oil brushing helps achieve a crispier crust and prevents sticking.
  • Adjust seasoning to taste, especially salt and pepper depending on the saltiness of the pesto and cheese.
  • Serve with a side salad or chips for a full meal.
