Instructions
- Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the potato gnocchi and cook according to the package instructions until they float to the top, about 2–3 minutes. Drain the gnocchi and set aside.
- Sauté Garlic: Heat sesame oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn.
- Make the Sauce: Stir in gochujang, soy sauce, rice vinegar, honey (or maple syrup), and water. Simmer the mixture for 2–3 minutes, stirring often to combine and thicken the sauce slightly.
- Toss Gnocchi in Sauce: Add the cooked gnocchi to the skillet. Toss everything together so the gnocchi is evenly coated in the spicy sauce.
- Caramelize: Continue to cook the gnocchi in the sauce for an additional 2–3 minutes, allowing it to lightly caramelize and the sauce to become sticky.
- Garnish and Serve: Remove the skillet from heat. Sprinkle the gnocchi with grated Parmesan cheese (if using), sliced green onions, toasted sesame seeds, and fresh herbs like cilantro or basil as desired. Serve immediately for best flavor and texture.
