- 3 tbsp vegetable oil, divided
- 4 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1/4 cup low-sodium chicken broth or water
- Salt and black pepper to taste

- 2 cups cooked white rice, for serving
- Sliced green onions (optional)
- Sesame seeds (optional)
Instructions
- Marinate the Chicken: In a bowl, combine the thinly sliced chicken breast with soy sauce, oyster sauce, hoisin sauce, and cornstarch. Toss well to coat all pieces evenly and let it marinate for 10 to 15 minutes to absorb the flavors.
- Cook the Chicken: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken in a single layer and sear for 2 to 3 minutes on each side until golden brown and fully cooked. Remove the chicken from the pan and set aside.
- Sauté Garlic and Peppers: In the same pan, add the remaining 1 tablespoon of oil. Sauté the minced garlic for about 30 seconds until fragrant, being careful not to burn it. Add the sliced red, yellow, and green bell peppers and stir-fry them for 3 to 4 minutes, until they are just tender but still crisp.
- Combine and Finish: Return the cooked chicken to the pan with the peppers. Pour in 1/4 cup of low-sodium chicken broth or water to create a light sauce. Stir everything together and cook for 1 to 2 minutes until heated through and the sauce slightly thickens. Season with salt and black pepper to taste.
